” I Maccheroni dolci”
The fundamental dish in Todi and in my house for “Ognissanti”, All Saints’ day, on November the 1st, are the ” Maccheroni dolci”pasta.
You should have to try this different way to taste pasta.
Our recipe:
Ingredients:
- 350 grams of Rigatoni or noodle or homemade pasta ( 350 grams of flour)
- grated zest of 1 lemon
- 2 teaspoons ground cinnamon
- 300 grams shelled walnut
- 150grams of sugar
- 100 grams of breadcrumbs
- 3/8 cups of Perugina sweetened cocoa powder
- Alchermes liqueur
- Chocolate
Mix flour and water to prepare the dough or choose the pasta you prefer.
Place the finely chopped walnuts in a bowl, add sugar, cinnamon, lemon zest and breadcrumbs.
Boil the pasta in salty water, drain it well and add to the walnut mixture.
Blend well to let the sugar and cocoa dissolve.
Now if you like it add the cocoa powder or Alchermes liqueur or some grated chocolate flakes.
In my family we add everything, no rules, just the wait for the perfect moment of Delight and Bliss.
Serve cold as dessert.
